Rusty Hunt’s Cranberry Chutney

After enjoying Rusty’s chutney for years at other people’s homes, I finally pulled out her recipe and made it myself this Christmas. What a wonderful smell throughout the house for the day.

Simmer 20 minutes:

-1 cup water
-3/4 cup brown sugar
-1/2 cup white sugar
-1 cup onion, chopped

Stir in:

All ingredients have been added. Now we simmer...

-3/4 cup cider vinegar
-2 tart apples, chopped
-1/2 tsp. salt
-1 tsp. fresh grated ginger
-1/2 tsp. mace and curry

Continue to simmer another 20-30 minutes. Stir in:

-12 ozs. cranberries
-1/2 cup raisins
-Juice of 2 oranges
-Grated rinds of 2 oranges

Raise heat until cranberries burst. Simmer another 10-15 minutes.

I made this a day before Christmas. It was better than store-bought! A delicious combination of flavors. Thanks for the recipe, Rusty.
